Tableside Dining Returns with a Theatrical Flair

After years of flat plates arriving from the kitchen with little ceremony, tableside preparation is making a serious comeback. This revival is seen in Michelin-starred bistros, luxury hotel dining rooms, and freshly refitted cruise ships.

The timing is intentional: diners want more than a meal—they want an experience. Experiential dining has jumped 46% year over year, with 48% of Americans more likely to book a restaurant offering something unique.

Tableside service delivers technique made visible and theater built into the meal price. At The Stonehouse Restaurant at San Ysidro Ranch in Montecito, California, tableside theater is central.

Dishes like Steak Diane and Duck à l’Orange are flambéed at the table, Dover Sole is deboned and filleted, and beef Wellington is carved in full view. Desserts include Bananas Foster, Cherries Jubilee, and Crêpes Suzette, all flame-finished.

Drinks like the Smoky Blood Orange Margarita are finished with wood smoke. At Four Seasons Resort Oahu at Ko Olina, fish sommeliers guide guests through a personalized seafood experience, with the signature Lobster Pot Pie carved tableside to reveal a whole lobster in truffle brandy cream.

The A5 Wagyu Old Fashioned uses wagyu fat-washed whiskey finished with aromatic smoke. At La Gaia in Ibiza, Chef Óscar Molina presents an artichoke dish with Balearic black broth steeped tableside through a coffeemaker-style apparatus.

A clay-baked onion is cracked open and plated over octopus and lamb sweetbreads. In Greenville, South Carolina, Scoundrel, which earned a Michelin Star in November 2025, features beef tartare assembled in front of guests.

At Panko in Charlotte, the Niko Roll is torched tableside, and the Chaparita cocktail arrives in a smoke-filled glass box. Celebrity Cruises invested over $250 million to modernize its Solstice-class fleet, with tableside dining central to the new program.

Trattoria Rossa serves Roman and Southern Italian cuisine with tableside preparations, and diners can customize cannoli made at their table. Tableside dining never disappeared; it waited for diners to want it again.

Now, it works equally well in Michelin-starred rooms and Peruvian-Nikkei kitchens. More than half of Americans say they will pay a premium for a one-of-a-kind experience in 2026.

Restaurants pulling a cart to the table have found a direct answer to that demand.
