A mobile tortilla factory has begun operations in Sonoma, bringing freshly made corn tortillas to the community. The TortillerĂa Ortuño trailer is parked at the Sonoma Valley Fruit Basket in Boyes Hot Springs.
The concept was pioneered in Modesto and has spread to various California communities over the past five years. The mobile unit uses industrial machinery to produce thousands of tortillas per hour from masa harina.
